Basil Pesto

  • 2 cups of fresh basil leaves
  • 1/2 cup of freshly grated Parmesan cheese
  • 1/2 cup of fine olive oil
  • 1/3 cup of pine nuts
  • 3 cloves of garlic, crushed
  • course sea salt
  • Method

    Crush the basil leaves, salt and garlic together either in the food processor or pestle and mortar.

    Add the pine nuts and oil a little at a time keeping blending until you have a rough paste.

    Add the grated cheese and the last of the oil.

    Mix well and store in the fridge in a covered jar.

    I keep a layer of oil on top of the sauce, to maintain the colour and texture.
