Fried Green Tomatoes
Slice the tomatoes into 1/4 - 1/2-inch slices.
Spread on kitchen paper to soak up the excess juices while you prepare the coating.
Place the beaten egg in a shallow bowl ready for dipping the sliced tomatoes into.
Scatter a good layer of cornmeal on a dinner plate and season well with salt and pepper and a good pinch of paprika.
Heat a about 2 cm of vegetable oil in a shallow frying pan. Not smoking heat, just hot!
Take the tomato slices, dipping first in the beaten egg and then coating well in the seasoned corn meal.
Fry in batches in the hot oil for about 3 minutes on each side or until golden. Gently turning to make sure that they crisp up on each side.
Drain on kitchen paper and eat straight away.
